Bali’s cocktail conversation moves deeper into the jungle this February as Ambar Ubud Bar at Mandapa, a Ritz-Carlton Reserve, unveils ‘Spirits of the Ubud Jungle’ — a two-day collaborative showcase that places sustainability, provenance, and regional bar talent squarely at its core.

Set high above the Ayung River, where rainforest canopy replaces skyline, the cocktail event — which takes place on 27 and 28 February 2026 — brings together a tight curation of some of Asia’s most respected bars for a creative exchange that’s rooted in provenance and place.

Participating bars include Jakarta’s Carrots (No. 34 on Asia’s 50 Best Bars 2025), Hong Kong’s agave-forward COA (which has taken top spot in Asia’s 50 Best Bars for three years running from 2021 to 2023), Singapore’s sustainability-led FURA, Seoul’s whisky-rich speakeasy Le Chamber, as well as Hanoi modernist favourite Workshop 14 for a cross-section of Asia’s bar culture that spans culinary technique, spirits scholarship, fermentation, and scientific mixology.

And rather than parachuting in signature serves, each team will interpret Ubud’s biodiversity through a live “Black Box Challenge” with their own distinctive cocktail philosophies, working with a mystery selection of local plants, roots and fruits — some of which they would forage for themselves — to craft one-off cocktails shaped by instinct, technique and narrative.

The philosophical backbone of the event comes from Adi San, Head Mixologist at Ambar Ubud Bar, whose approach draws from ‘lontar taru pramana’, an ancient Balinese manuscript detailing the medicinal uses of plants. In Ubud — a name derived from “Ubad”, meaning medicine — botanicals are not mere garnish, but deeply spiritual in significance.

At Ambar, that translates into house-made vermouth, coconut-aged cocktails, and a broader commitment to working with indigenous ingredients and responsible sourcing. The Black Box Challenge format amplifies that ethos: constraints force creativity, and local biodiversity becomes the protagonist.

In practical terms, this is sustainability embedded into workflow — foraging, plant-forward builds, waste-conscious techniques, and a respect for multi-generational knowledge systems. It not only fits in the context of Mandapa’s broader pillars of wellness, gastronomy and sustainability, but also reflects a broader shift in global bartending toward conscious production, where flavour and footprint are considered in equal measure.
