Food Capital’s returning Thailand Flavourscape Buffet invites diners on a flavour-packed journey to discover the diverse regional cuisines that make Thailand one of Southeast Asia’s richest culinary destinations.
Lovers of Thai food, this one’s for you — Grand Copthorne Waterfront Hotel Singapore’s Thailand Flavourscape Buffet makes its highly-anticipated return this July.
Running from 13 July to 23 August 2026 at Food Capital, this year’s edition expands on last year’s Phuket-focused showcase with a six-hands collaboration between MasterChef UK finalist Chef Nawamin “Boss” Pinpathomrat (pictured below) of REALM Bangkok, REALM Songkhla and REALM Thumnoonvithim, Chef Witoon Kamonphun of M Social Hotel Phuket, and Grand Copthorne Waterfront Hotel Singapore’s Executive Chef David Toh.
Together, the present a menu that journeys across Thailand’s regional kitchens, balancing familiar favourites with lesser-known specialities while remaining approachable for local diners.

Indeed, Thai cuisine is often reduced to a familiar handful of dishes outside the country — pad thai, tom yum and green curry among them. Yet Thailand’s culinary identity is far richer, shaped by distinct regional traditions that reflect everything from the herbaceous flavours of the north and the fiery curries of the south to the balanced, aromatic cooking of the central plains.
And that’s where Thailand Flavourscape Buffet comes in, offering diners an accessible way to discover the remarkable diversity that exists beyond the country’s greatest hits.
Expect everything from Grand Tom Yum Goong and richly spiced Wagyu Massaman Curry to Signature Yellow Curry Flower Crab, Andaman Seafood Curry with Betel Leaves, Southern Phuket-Style Braised Pork Belly and Steamed Seabass with Lime and Chilli. Live stations serving Thai Boat Noodles, Moo Ping pork skewers and freshly prepared salads capture the energy of Thailand’s vibrant street food culture, while desserts such as Mango Sticky Rice, Pumpkin Custard, Thai Crispy Pancakes and Thai Milk Tea Ice Cream round off the experience on a sweet note.

Guests visiting on opening night will also enjoy cultural performances, a Thai-style Whole Golden Pig presentation and festive pop-up experiences that extend the celebration beyond the plate.
For anyone who already loves Thai food, Thailand Flavourscape offers an opportunity to revisit familiar flavours through the lens of regional diversity. For everyone else, it is an invitation to discover why Thai cuisine continues to rank among Southeast Asia’s most beloved culinary traditions — one region, one dish and one bite at a time.
Lunch is priced from S$72++ per adult (S$36++ per child), while dinner starts from S$106++ per adult (S$53++ per child), with children aged five and below dining free.
