For those who love their food flame-kissed, this epic one-night-only Osteria Mozza Singapore x Burnt Ends x Butcher’s Block six-hands dinner will be up your alley.

Fire, flavour, and finesse converge in this one-night-only six-hands dinner on 27 August from 6pm at Osteria Mozza Singapore that brings together three titans of wood-fire cooking: American celebrity chef Nancy Silverton of Osteria Mozza fame, Dave Pynt of award-winning Burnt Ends, and Jordan Keao from Raffles Hotel’s Butcher’s Block. Taking place at Osteria Mozza Singapore in Hilton Singapore Orchard, this collaborative dinner will highlight ingredient-led cuisine, whole-animal butchery, and a shared zero-waste ethos — all expressed through the primal, flame-kissed lens of open-fire cooking.

The Chefs:

  • Nancy Silverton: The James Beard Award-winning icon behind Osteria Mozza and Chi SPACCA, celebrated for her ingredient-driven Italian cuisine and Michelin Green Star-worthy sustainability.
  • Dave Pynt: Chef-owner of Singapore’s Michelin-starred Burnt Ends, known globally for redefining modern barbecue with bold, nose-to-tail precision.
  • Jordan Keao: Hawaiian-born chef of Butcher’s Block at Raffles Hotel, who brings ancestral island heritage and mastery of whole-animal cookery to his progressive wood-fire concept.

The Menu Highlights:

Start the night with fire-forged canapés from each chef:

  • Steak Frites with Caviar (Burnt Ends)
  • Ahi Poke (Butcher’s Block)
  • Corn Dog, Mozza-style (Osteria Mozza)

Move into a deeply flavourful set of courses such as:

  • W.A. Marron Cocktail and Salt-Baked Coral Trout Bouillabaisse (Burnt Ends)
  • Grilled Kalua Pork Ravioli with Manjimup truffle and Blackmore Farm Koji-Aged Short Rib with chimichurri and corn purée (Butcher’s Block)

The sweet finale comes courtesy of Nancy Silverton herself, including her signature:

  • Rosemary Olive Oil Cake with olive oil gelato
  • Tin Roof Sundae with caramel gelato, salted peanuts, and marshmallow sauce
