Experience two different takes on South Asian cuisine when modern Indian restaurant Revolver hosts Hong Kong’s Leela on 14 and 15 July 2024.

A four-hands collaboration dinner of epic proportions, this tie-up between Singapore’s own contemporary Indian restaurant Revolver hosts chef-owner Manav Tuli of Leela from Hong Kong.

Leela’s name derived from the Hindu concept of ‘lila’, which represents the divine play or sport of the gods, and Leela is Manav’s latest venture with the award-winning JIA Group that opened in November last year. Celebrated Chef Manav himself was formerly head of modern Indian restaurant CHAAT in Rosewood Hong Kong, leading that establishment to its first Michelin star (2022-2024), as well as One Diamond award from the Black Pearl Guide 2023 and 2024 among other accolades.

At Leela, Chef Manav delves into his heritage and puts a modern twist on Indian coastal cuisine, reinterpreting traditional royal dishes from the Maurya Empire from 300 BC, as well as notable street snacks and staples from Indian states such as Punjab and Mumbai.

For this exclusive four-hands dinner on both nights, he’ll match up with Revolver’s own Executive Chef and Partner Jitin Joshi to present an eight course menu – priced at S$239++ per person) – featuring four dishes from four states in India, with Manav focusing on presenting the traditional takes of each dish and Jitin working on contemporary interpretations of these classics.

Diners can expect to start with snacks like Revolver’s Malabar Crab with caviar and Leela’s Karwari Red Snapper with Kolambi chutney. Delving into regional specialties, “GOA” brings forth Revolver’s Mackerel Rechado and Leela’s Black Tiger Prawns Balchao, while “KERALA” offers Revolver’s Pulled Lamb Bao with Curry Leaf and Coconut alongside Leela’s Monkfish Tail Pollichathu. Transitioning to “TAMIL NADU”, guests can savour Revolver’s Chettinad Pousin and Leela’s Kothamalli Beef Cheek Biryani, followed by a delightful conclusion with Revolver’s Passion Fruit Steamed Yogurt and Leela’s Bengali Patishapta with Nolen Gur Ice Cream.
