The Debut of Xiaoling Winery

Held as part of its “A Tale of Two Worlds: French Winemaking Meets Chinese Soil” series of wine dinners, 5 ON 25 at Andaz Singapore will be hosting “The Debut of Xiaoling”, an exclusive dinner featuring the wines of the Yunnan winery.

High above the clouds in Deqin County, Yunnan, Xiaoling Winery represents the next generation of Chinese fine wine — small in scale but immense in ambition. Founded by Bertrand Cristau, this boutique estate produces wines that marry precision winemaking with the drama of Himalayan terroir. Its vineyards sit between 2,000 and 2,600 metres in altitude, where the diurnal temperature swings and glacial-fed soils create wines of elegance, minerality, and natural vibrancy. Every plot is farmed by hand, with sustainability at its core and a philosophy rooted in expressing the purity of its mountain environment.

For its Singapore debut, Cristau himself will lead an intimate tasting — together with China’s first female Advanced Sommelier Meiyu Li — that traces Xiaoling’s story through a full lineup, from the crisp Baco Noir Rosé 2023 and aromatic Xiaoling Blanc 2023 to the complex Badong Xin Cun 2018 and signature Grand Vin 2020 that’s paired with an exquisite eight-course dinner by 5 ON 25’s culinary team.
