Marriott International’s Luxury Dining Series returns this year with a “Forgotten & Found” theme, inviting discerning diners on a multi-city culinary journey across Asia Pacific for meals that resurrect lost ingredients and traditions with modern flair.

Globetrotting epicureans, here’s something you don’t want to miss — Marriott International is set to reprise its successful Luxury Dining Series first introduced last year with a new edition that will take you on a multi-city pilgrimage celebrating the wonderful world of food.

Themed “Forgotten Flavors”, the second Luxury Dining Series will take place from July to September and will be a gastronomic an ode to culinary history, lost ingredients, and time-honoured techniques that risk vanishing in the rush of modern dining.

This thoughtful, even scholarly, culinary focus draws inspiration from its Future of Food 2025 report released last year. Among its findings? That diners are increasingly looking for highly-curated experiences with a strong local focus, and are willing to travel to emerging food capitals to find them.

The report also noted that diners are seeking authenticity, and especially look to chefs who champion the return of lost or neglected ingredients — from Himalayan grains to Jeju black pig, artisanal salts, and indigenous herbs, among others.

And that’s where Marriott International’s Luxury Dining Series comes in with this year’s theme. Expanding from six to seven cities across Asia Pacific, the 2025 edition will see participating properties — each of which are some of the region’s most prestigious luxury addresses — take the theme and run with their own interpretation. Chefs and mixologists from across its global portfolio will collaborate to “resurrect lost, neglected, and overlooked ingredients”, pairing tradition with innovation.

But the idea isn’t simply to cook with old ingredients for nostalgia’s sake; but to reimagine them for the contemporary palate — an approach that nods both to culinary anthropology and modern creativity.
