The newly-opened Artisan outpost at Pererenan brings a soulful, neighbourhood-driven take on modern Italian cooking to one of Bali’s most exciting dining districts.
Pererenan’s dining scene has been gathering momentum for years — first with surf-soaked cafés, then with chef-driven bistros drawing Canggu’s more discerning crowd. But its latest arrival, Artisan, promises something different: an Italian restaurant built on neighbourhood warmth, ingredient integrity, and the quiet confidence of a kitchen led by a chef who has cooked everywhere from Noma to Guy Savoy.
This fourth outpost — following those in Uluwatu, Ungasan, and Bingin — the Pererenan outpost has its own pulse, offering the unmistakeable Artisan blend of tropical ease and industrial cool while dialling into Pererenan’s slower, more grounded rhythm. Smooth concrete and mellow lighting meet generous greenery and a soundtrack calibrated for evenings that stretch; the sort of room that invites you to stay for “just one more drink”, then makes that decision feel inevitable.

At the centre of it all is Executive Chef Paolo Tancredi Arlotta, whose Piedmontese roots and global résumé give Artisan its new culinary identity. His dishes are Italian in foundation but unmistakably shaped by Bali’s terroir and the chef’s love for craft. The Golden Risotto — carnaroli rice tinted with yellow capsicum purée and topped with grilled prawn and Javanese long pepper — captures that balance between technique and island brightness.
The Gnocchi with duck and porcini ragù finished with dark cocoa channels deep northern Italian comfort, while Fish of the Day with spigariello, confit tomato, and tomato-compote beurre blanc shows a lighter, more coastal hand. Even the Grilled Half Chicken comes layered with intent, arriving with clam jus and cooked clams for a nod to surf-and-turf the Italian way.
