Coffee nook by day, Flamingo Coffee & Wine now redefines the after-hours wine experience on Amoy Street — where playlists replace pretension, and wine is drunk by feel rather than formality.
There was a time when enjoying wine meant drinking within the hushed confines and white tablecloths of some fine-dining restaurant, waited on by sommeliers with more wine knowledge than patience. But if the past few years have taught the drinking world anything? It’s that the new generation of wine lovers prefers playlists to pretension — and few places capture that kind of experience than Flamingo Coffee & Wine on Amoy Street.
Since inception, Flamingo played the companion role of coffeehouse to playful cocktail bar Stay Gold at dual concept Stay Gold Flamingo. For four years it served as a favourite coffee spot dishing out flat whites and brunch favourites to digital nomads and office drones working in the area by day; come evening the lights dim and the space serves as mere transient corridor to the edgy cocktail bar.
Until now. These days Flamingo sheds its café skin to reveal a new alter ego: a wine bar that’s equal parts discovery and dopamine hit.
Here, wine isn’t categorised by grape or geography. The menu is sectioned by feel, curated as though it was a Spotify playlist. Sip your way through ‘Ocean Eyes’, featuring fresh, briny whites the likes of the 2020 Martin Muthenthaler Grüner Veltliner from Austria, or drift into ‘Uptown Funk’, where skin-contact wines like the 2021 Puchang Vineyard Rkatsiteli from Xinjiang bring a deliciously wild, unfiltered edge.
Sparkling selections get their own setlist too — from the zesty ‘Lemon Tree’ to ‘Life in Pink’, and the decadently named “Billionaire” for those looking to splash the cash for premium bubbly.
This is all music to the palate — and that’s no accident. Stay Gold has, over the years, made music central to its theme; the Stay Gold Flamingo team, led by industry mavericks Jerrold Khoo and Bai JiaWei, continues to build on that ecosystem of sound, soul, and social energy with Flamingo.
This isn’t a bar that aims to teach you about tannins or terroir; it can, but here it’s really all about feels.
Though we didn’t get to try, the food also looks to be curated to hit the same easy pleasure point: fried oysters dusted in spiced powder, truffle-blue cheese pulled pork pizza, and ribeye steak cubes glossed with truffle teriyaki. You know, the kind of plates that make you stay for “just one more glass”, which might come from Flamingo’s by-the-glass selection or its Wine of the Month partner (it was Penfolds when we visited).
More than another wine venue, Flamingo represents an evolution in how Singapore — and much of the world — now drinks wine. Forget hushed reverence and encyclopaedic lists. Today’s drinkers are trading tasting notes for playlists, appellations for ambience, and stiff for spirited.
Flamingo gets that — and pours it by the glass until midnight.
