The Philippines is finally hosting its own cocktail festival, with The Philippine Cocktail Fiesta 2025 set to transform Manila into a week-long celebration of mixology, culture, and Filipino hospitality this November.

After years of playing guest at some of Asia’s biggest bar festivals — from Bangkok Bar Show and Penang Cocktail Week to Singapore Cocktail Festival and Kuala Lumpur Cocktail Week — it’s finally the Philippines’ turn to throw the party. This November, The Philippine Cocktail Fiesta 2025 will see Manila transform into a week-long celebration of mixology, culture, and community.

Running from 17–23 November 2025, the fiesta will span nearly 100 bars across Metro Manila, from Makati to Quezon City and as far south as Alabang. But the epicentre of the action will be Solaire Resort Entertainment City, which plays host to most of the international guest shifts, dinners, and industry sessions.

Spearheaded by DrinkCollectiv.com — the Philippines’ first drinks-focused media platform — together with DBWY (Drinks Be With You), the grassroots bar community group behind countless local bartender collaborations, the festival will shine an important spotlight on the Filipino bartenders shaping Asia’s drinking scene.

“We’ve been inspired by how events like BKK Bar Show or Taiwan Can Drink unite their cocktail communities,” says festival director Tatum Ancheta. “This fiesta is our way of doing the same — but in true Filipino fashion: with joy, warmth, and plenty of hospitality.”

Over the past decade, Filipino bartenders have quietly become some of Asia’s best-kept secrets. From The Curator Coffee & Cocktails and The Spirits Library to The Back Room and The Grasshopper Bar, Manila’s top bars have trained talents who now lead cocktail programmes from Macau to Hong Kong, Singapore to Kuala Lumpur. Many also learned their trade in award-winning bars across the region, and have returned not just to shake and stir, but to share what they’ve learned abroad.

“It’s about coming full circle,” says Mic Flores, operations manager of the fiesta and DBWY co-founder. “The same people who helped put Filipino hospitality on the map are coming back to elevate the next generation.”

Then there’s the guest bartender roster for Philippine Cocktail Fiesta 2025, which reads like a who’s who of Asia mixology: think. Lorenzo Antinori of Hong Kong’s Bar Leone (No.1 at The World’s 50 Best Bars 2025), Yangdup Lama of Delhi’s Sidecar, Antonio Lai of The Opposites and Quinary from Hong Kong, Amanda Wan of Three X Co in Kuala Lumpur, and Lauren Sosnowsky of Singapore’s Cat Bite Club will all headline bar shifts and pairing dinners across the city.

Not to be outdone, top bars from Cebu, Dumaguete, Iloilo, Palawan, La Union, and Davao are flying in to represent the Philippines’ regional cocktail talent — including Apartment 5, Lost Unicorn, The Oak Room, and Taste of Home by Gay Drinking with Carlos — showcasing how the nation’s creativity stretches far beyond the capital.

Expect more than just drinks. The week will feature cocktail pairing dinners with culinary luminaries like Chef Sau del Rosario of Café Fleur, along with international collaborations with bars like Wing Lei Bar (Macau) and The Han-Jia (Tainan). Meanwhile, industry-only masterclasses will dive deep into local spirits — from Lambanog and Bonifacio Pure Potstill Rum to discussions on building sustainable, locally inspired bar programs.

A recurring theme throughout the fiesta? Celebrating Filipino ingredients and stories. From calamansi to cacao, rum to rice wine, the sessions and panels will explore how local terroir can shape a modern cocktail identity that’s distinctively — and proudly — Filipino.

Perhaps most fittingly, the festival’s chosen name — “fiesta” — embodies the spirit of what makes the Philippine bar community special. “A fiesta isn’t just a party,” insists Ancheta. “It’s (also) about community, gratitude, and joy — values that define Filipino hospitality and what this event stands for.”
