Food Capital at Grand Copthorne Waterfront Singapore has unveiled its inaugural Riverside Peranakan Feast, a month-long buffet promoting Peranakan cuisine as living cultural heritage.

Food Capital at Grand Copthorne Waterfront Singapore is opening the new year with its inaugural ‘Riverside Peranakan Feast’, a sprawling month-long buffet spread that pulls together food, craft and cultural performance in partnership with The Peranakan Association Singapore.
It’s the rare kind of buffet that positions Peranakan cuisine as not just nostalgia, but as a living expression of Singapore’s heritage. The launch event on 6 January will not only unveil a kebaya showcase led by Baba Raymond Wong and performances by The Peranakan Voices choir, but also an appearance by 79-year-old Chef Shirley Tay — the “Singing Chef” who has long acted as a custodian of Nyonya culinary traditions — who will debut a new collection of age-old recipes, underscoring the continuity between domestic Peranakan kitchens and today’s dining landscape.
Touted as a celebration of “flavours, culture, and stories”, the buffet highlights classics such as Bakwan Kepiting, Deep-fried Pomfret with Sambal Chilli, Kachang Bendi Chincalok, and Goreng Assam Udang across rotating menus, created in collaboration with Grand Copthorne Waterfront’s Executive Chef David Toh.
What makes this buffet compelling is not just abundance, but purpose. Peranakan cuisine is notoriously complex and labour intensive, which has led to traditional Peranakan restaurants dwindling in Singapore and home-cooked Peranakan meals becoming increasingly rare. Dining initiatives like these play a crucial role in keeping culinary heritage visible, and just as importantly, accessible to new audiences. The buffet allows diners to explore the meaning behind these recipes — dishes that carry generational memory in every spice, sambal, and slow-braise.
