A Journey Through the Archipelago at Banyan Tree Bintan (Bintan)
One of Indonesia’s most influential chefs heads to Bintan this August as Chef Mandif Warokka joins Banyan Tree Bintan’s Sous Chef Rizkan for a two-night four-hands dinner celebrating the flavours of the archipelago. Happening 21 and 22 August at the resort’s rainforest-perched Treetops Restaurant, ‘A Journey Through the Archipelago’ presents a contemporary exploration of Indonesia’s regional cuisines through refined techniques, local ingredients and cultural storytelling.
Warokka has spent much of his career championing progressive Indonesian cuisine, first at Bali’s Teatro Gastroteque before opening the acclaimed Blanco par Mandif in Ubud, where he helped redefine Indonesian fine dining by presenting traditional flavours with modern precision. A former chef at Banyan Tree Ungasan Bali and Indonesia’s representative at the 2021 Bocuse d’Or, he has become one of the country’s leading ambassadors for its culinary heritage. His return to a Banyan Tree property also lends the collaboration added significance, bringing one of the group’s alumni back to showcase Indonesian gastronomy beyond Bali while spotlighting Bintan as an emerging destination for destination dining.
The collaborative menu features dishes including the spice-driven Scallop “Papinyo” inspired by Maluku, Aged Kiwami Wagyu Fillet 9+, and an elegant reinterpretation of the humble cassava getuk for dessert. Optional wine pairings from Bali’s pioneering Hatten Wines further reinforce the celebration of homegrown craftsmanship.

Guests can choose between a three-course menu (IDR 1,200,000++ or IDR 1,900,000++ with wine pairing) and a five-course experience (IDR 1,800,000++ or IDR 2,800,000++ with wine pairing).
