A Stellar Chef Collab: HighHouse Kicks Off ‘The High Tables’ Dining Series with Chef Daniele Sperindio
The sort who love your dinners with a view and along with a splash of culinary star power? Sleek sky-high day-to-night destination HighHouse has launched a brand-new chef collaboration series “The High Tables”, and to kick off its debut it has tapped Chef Daniele Sperindio of award-winning Art di Daniele Sperindio for a three-month dining takeover.
The Italian culinary maestro — whose Michelin-starred modern Italian restaurant recently shuttered over at National Gallery Singapore because of a tenancy refresh — is introducing an exclusive menu of eight dishes that fuse Mediterranean soul with local influences, all designed to match the venue’s buzzy vibe-dining energy.
Highlights include fusion creations such as Panino Al Sugo Frito, a deep-fried flatbread topped with burrata, crispy Italian peppers, and an edgy ‘XO’ sauce made from porcini mushrooms, braised Parma ham, and Korean chilli, or Cacio e Pepe di Mare Tutte Bucce, which sees pasta tossed in a tangy sauce of black lime and grated parmesan rinds that’s sprinkled with Italian furikake and served with seared Hokkaido scallops.
For those who miss a little taste of Art di Daniele Sperindio? There’s the Piemonte, a Piedmontese-inspired pasta enveloped by aged pecorino, Piedmont hazelnuts, and shavings of winter truffle.
Chef Daniele calls his creations in this chef-collab “satisfying, friendly, and a little unexpected”. We call it a must-visit.

You’ll want to head over to 67 Pall Mall Singapore, where the acclaimed private members’ wine club is currently hosting the talented Chef Francisco Araya and his dough-whispering partner Chef Fernanda Guerrero from Michelin-starred modern South American restaurant Araya for the latest instalment of their ‘Resident Chef Series’.
From now till end-June, Chefs Araya and Guerrero will be turning up some Latin American flair with a three-month gastronomic journey spotlighting contemporary Chilean cuisine that’ll be seamlessly paired with wines from one of the most extensive wine collections in the world. What’s especially compelling? The chefs’ ability to balance soulful South American culinary storytelling with cosmopolitan technique, and 67 Pall Mall’s expert wine pairings that push the boundaries of the familiar.
A playful rendition of Kanpachi Ceviche — amberjack tossed in leche de tigre along with buttery avocado and crisp green apple — matched with the bubbly vigour of a 2018 Cuvée Marie-Luise Brut from Rheinhessen? The indolent creaminess of the Arroz Meloso, packed with umami from maitake and king oyster mushrooms along with the sweet smokiness of ñora peppers, lifted by the racy fruitiness of the 2021 Tenuta di Carleone Il Guercio?

Signature Reserve x FOC Restaurant is a Dram Good Tapas Affair
If your idea of a good night involves smoky charred Iberico pork and even smokier Islay whisky, this one’s for you. Whisky-centric bar eatery Signature Reserve at Fullerton Hotel Singapore has tapped the unapologetically loud, proud and outrageously tasty Catalan restaurant FOC for a kitchen takeover that’s set to bring fire to your whisky-fuelled night.
Dropping into Signature Reserve will be Chef Juanjo Carrillo, who will bring FOC Restaurant’s spunky culinary approach and a taste of Barcelona with a specially curated menu of Catalan-inspired small plates brimming with serious attitude.
Set your tastebuds alight with the likes of Foie Gras Mousse with vermouth rosso jelly and crackers, smoky Iberico Pork Skewers served Moroccan-style with creamy chickpea hummus, crispy Crab Croquetas with spicy sriracha mayo, and the show-stopping roasted Atlantic Octopus & Pork Jowl.
The whisky list at Signature Reserve is its own adventure, with a deep bench of limited-edition releases. While you’re here you’ll want to sample the Frank McHardy’s Signature Series, an exceptional lineup of cask-strength expressions chosen by the legendary former distiller at Springbank. Aside from whisky they’ve also shaken up six new cocktails, from the herbaceous Golden Ember to the decadent Chocolate Martini, all crafted to match the vibrant food without overwhelming it.
Even better? This collaboration is set to run for six months, at the least.

Tiffin Room x Indian Accent: A Three-Night Dinner Collab Promising a Fiery Feast of Epic Proportions
Here’s one for serious fans of Indian fine dining: coming off its Tiffin Room Tandoori Festival earlier this year, the Raffles Singapore’s storied fine-dining Indian restaurant will be welcoming New Delhi’s trailblazing Indian Accent for a three-night only chef collaboration that promises explosive fireworks… of the flavour variety.
Visiting Chef Shantanu Mehrotra — who previously helmed a two-week culinary residency at Mandala Club her in Singapore for Mandala Masters in 2023 — is back this time from 22 to 24 May 2025, joining Tiffin Room’s Chef Kuldeep Negi for a collaborative contemporary tasting menu that blends culinary nostalgia with modern finesse.
Expect a multi-course journey that begins with street snack-inspired starters, such as Indian Accent’s signature Black Garlic Dhokka and Tiffin Room’s own tamarind chutney-lashed Basil Tart, weaving into a series of elegant mains served up in tiffins — think John Dory dressed with coconut curry espuma, aromatic chunks of tender spiced chicken that is Murgh Curry, the robust flavours of Braised Lamb Shank in a creamy curry, and more, accompanied with enough of an array of flatbreads and condiments to make you feel like a maharaja.
One thing for sure: this won’t be your average curry night.
