With a menu powered by open flames, fermented garnishes, char, smoke, and craft, ETNA promises more than just a theatrical and sensory experience in Phuket. Think dishes rooted in contemporary fliar, but reborn through a local lens using the island’s prodigious bounty such as lemongrass, kaffir lime, and just-caught seafood injecting Southeast Asian flair into stoic Eastern European technique.

Imagine a beetroot borscht elevated with kaffir lime zest, or a Caucasian fish stew reimagined using fresh Andaman catch. There’s plenty of classic luxury too, such as ravioli served up with salmon and pike caviar, while charcoal-fired ribeye and king crab are given primal fire-kissed treatment.

By day, the space feels like a lakeside hideaway. By night, it transforms and reveals a more coy and playful side.
