At Wildcard, the idea of a wine bar is quietly upended by a kitchen with real intent, where soulful food, lo-fi bottles and an easy sense of place work in lockstep to turn a casual drink into an evening well spent.

Wildcard does not so much defy categorisation as gently roll its eyes at the very idea of it. Call it a neighbourhood wine bar if you must, but wine plays just one aspect of what makes it so appealing. Founded by the team behind Maxi Coffee Bar, this iconclastic little Havelock Road hideaway has quietly matured into a place where food, drink and atmosphere are in constant, mutually beneficial conversation. None of them works properly without the others, and all the better for it.

At the heart of this shift is the kitchen under Chef Angelo Maniam, whose menu understands a fundamental truth of modern wine bar dining: pouring good wine alone is no longer enough. The food here isn’t simply decorative nibbling designed to stop you keeling over mid-Gamay; it needs to also carry its own narrative weight.

Plates here carry more than flavour, they are soulful, memory-driven expressions that deliver nostalgia and playfulness in equal measure. You know, the kind that encourage you to linger, to drink more thoughtfully, and to order one just one more plate.

The oxtail croquette at Wildcard

The Torched Mackerel, for example, slicked with gochujang butter and sharpened by pickled leeks, strikes that ideal balance between richness and restraint, while the Oxtail Croquettes — indulgent and unctuous fritters of braised oxtail — delivers comfort in a way that feels considered rather than simply being clever for the sake of it.

Even the snacks are treated with respect. The Housemade Pretzels, dusted with the kitchen’s house spice blend and paired with a compound butter inspired by a beloved Kerala dish, is exactly the sort of thing that turns a single glass into a three-hour commitment. You start with one, and end up cancelling whatever vague plans you had for later.

This is where Wildcard distinguishes itself from the glut of wine-led venues content to phone in the hotel kitchen. Plates like Lamb Belly Skewers, scented with Sichuan spice and Italian herbs, or the deeply savoury Mushroom Mezzi Rigatoni, come with enough heft and character to stand up to the lo-fi wines rather than be bullied by them.

Here, those who have dietary considerations aren’t treated as an afterthought. Chef Maniam’s kitchen handles vegetables with confidence and imagination, from the Fried Broccolini dressed with tea leaf dust and green chilli raita to the tahini-flecked Fried Jerusalem Artichokes that manage to be both crispy and creamy.

Desserts here matter too, as it should. The Sticky Toffee Pudding is unapologetically comforting, the sort of thing that ends an evening with a collective sigh and a scramble for the last bite. It is a reminder that wine bars with kitchens that care tend to endure long after the latest drinking trend has shuffled off.

The wine list favours expression over posturing, bottles chosen for how they drink rather than how they photograph or how much they cost. Oh, and it would be a mistake to ignore the cocktails. The bottled Negronis, done in collaboration with London’s Bar Termini, are dangerously easy company.

Throw in the after-hours jazz sessions and the loose, experimental energy of its playful Sunday Test Kitchen, and Wildcard begins to read less like a business chasing bums on seats and more like one building a following. Flash it is not. Even better, it has warmth, flavour and a sense of cohesion that money can’t fake.
