As Niseko powers into another ski season, AóRA opens at Chatrium Niseko with a quieter kind of confidence, bringing ingredient-driven contemporary dining to the heart of Hirafu.

The onset of another high-octane ski season at Niseko is marked by the arrival of a different kind — AóRA Restaurant, which opens this weekend at Chatrium Niseko right in Hirafu in the heart of the picturesque Japanese ski town.

Located at the former Kamimura space in the premier resort, AóRA is a restaurant offering contemporary, ingredient-driven dining grounded firmly in Hokkaido’s terroir. The newest project from EatMe — the hospitality group behind Tokyo Confidential, Niseko Confidential, and the forthcoming agave-focused Tepache — AóRA’s kitchen draws from Italian, French and Pacific Northwest coastal influences without ever losing sight of place.

Helmed by Head Chef Luiz Low, whose 25-year career spans Penang, Shanghai, London and Hokkaido, the seafood-forward cooking is clean, expressive, and quietly assured, allowing Hokkaido’s produce to lead. Dishes like Uni Crostini layered with garlic butter and tomato on crisp baguette, Shio Koji Black Cod in green curry velouté with lime rice, or Wagyu Sirloin finished with port wine jus and celeriac purée speak to a style that values precision over excess. Three tasting menus — ‘Petite’, ‘Signature’ and ‘Premium’ — offer varying levels of indulgence, with optional flourishes of caviar and truffle for those seeking ski-season luxury dialled up a notch.

The AóRA experience is rounded out by a drinks programme that reflects EatMe’s deep Asia Pacific cocktail expertise, along with a wine list champions both Japanese producers and global benchmarks, while sake selections spotlight regional breweries and stylistic diversity. Seasonal cocktails lean into local spirits and fresh herbs, designed not to steal focus, but to quietly echo the kitchen’s philosophy.
