At Medusa Osteria Romana, dinner doesn’t begin politely so much as explode into life — an unapologetically loud, indulgent, Roman-spirited romp that values appetite and atmosphere over quiet reverence.

Singapore’s first-ever Osteria Romana, well, or at least a very noisy modern take on that traditional Roman tavern, it grabs you by the lapels, pulls you through the door, and tells you loudly that dinner has already started. And this is not a trattoria in the linen-draped, familial sense of the word. It is closer in spirit to Hard Rock Cafe in its prime: noisy, democratic, slightly unruly, and absolutely uninterested in whether you were hoping for a quiet night. You come here to eat, to drink, to talk over one another, to celebrate, and to stay longer than planned.

That comparison is not meant as provocation. Hard Rock, at its best, was about shared energy — tables full of loud people, music humming through the walls, food that arrived fast, hot, and with fanfare, and with a generosity that suggested restraint was not on the menu. Medusa Osteria Romana channels that same raucous conviviality, but swaps electric guitars for Roman bravado and leather booths for a riot of crimson, neon, and 1960s Italian bravura.

The venue, tucked into the dining enclave that is JW Marriott South Beach, glows red and unapologetic, with cheeky iconography and a bar that encourages leaning, lingering, and ordering yet one more thing.

The kitchen follows the same DNA. Among Italian cuisine, Roman food, when done properly, is blunt and honest. It is not decorative. It is never clever for the sake of being clever. It is about fat and carbs that’s wrapped with a whole lot of strut and poise. At Medusa Osteria Romana, that philosophy is delivered with a raised voice and a grin.

You’ll want to order the Fried Burrata, which fritters the fresh Italian cow’s milk cheese from Puglia into delicious deep-fried submission spiked with pepper and the saltiness of crumbled guanciale, or you can sneer at the puffed-up earnestness of Neapolitan orthodoxy by opting here for Roman-style pinsas, from the classic Margherita and the umami-laden Truffle Mushrooms to the bombastically porcine Porchetta 2.0 loaded with roast pork.

Mezze Maniche

You may be tempted by the mains, but it’s pasta where Medusa flexes. You can go all traditional with the Spaghetti which is your classic Roman carbonara, the Pappardelle that comes all drenched in a ragu of osso bucco, or go the whole hog with the Cassercce which appears as a heavy, messy, and deeply satisfying Roman three-way of carbonara, amatriciana, and cacio e pepe that tastes like it was invented at the end of a long drunken night.

This is not pasta for photographing. This is pasta for eating.

Dessert, too, plays to excess. The Truffle Tiramisu, for example, is exactly as indulgent as it sounds, and you’ll find yourself fighting with your dining companions for the very last spoonful (especially the bits dotted with shaved black truffle).

Cocktails here are named for Roman or Greek mythology.

As for its drinks programme? The wine list needs a little bit of work to bring out true Roman excess, but the cocktail selection is full of cheeky, spirited fun. If you’re not into Greek or Roman mythology the naming convention of these libations will make little sense to you, but drinks like the Diana (an Aviation take), Mars (a Cynar twist on the Negroni), and Alex the Great (a chocolate-spiked Brandy Alexander, obviously) builds on Medusa’s theme.

In case it isn’t clear to you by now, Medusa Osteria Romana is not trying to replicate the hushed romance of a backstreet Roman trattoria. It is doing something else entirely — bottling the chaos, confidence, and appetite of a Roman night out, then turning the volume up a notch. And if you do turn up on an evening when multiple parties are celebrating birthdays like we did, it will get rowdy and raucous like those good old days at Hard Rock Cafe.

And that’s precisely the point.
