Golden Peony at Conrad Singapore Marina Bay is set to welcome the refined artistry of China Blue by Jereme Leung this October, as Chef Khor Eng Yew brings his modern reimagining of Chinese cuisine from Manila to Singapore for an exclusive week-long residency that culminates in a four-hands dinner with Chef Ku Keung.
Golden Peony is set host an exceptional week-long culinary residency by China Blue by Jereme Leung in Conrad Manila when its Executive Chinese Chef Khor Eng Yew drops into the flagship Conrad Singapore Marina Bay Chinese restaurant later this month.
Running from 27 October to 2 November 2025, the residency will see Chef Khor brings his celebrated artistry to Singapore for the very first time. Lovers of fine Chinese cuisine will be able to experience his reimagining of Chinese gastronomy punctuated with refined storytelling and and contemporary flair, with inventive dishes such as Drunken Sea Mantis with Sweet Plum and Shaoxing Wine, Roasted Black Cod with Torch Ginger Flower, and Free Range Chicken with Crispy Rice and Superior Chicken Broth.

Lunches will feature China Blue’s signature dim sum — including the decadent Boston Lobster Dumpling with Oscietra Caviar and Mini Abalone Siew Mai — crafted as elegant expressions of tradition redefined for a more progressive palate.
The China Blue residency at Golden Peony will culminate on 1 November 2025 with “Modernity Meets Tradition: A Six-Course Four-Hands Cantonese Dinner”, an exclusive collaboration between Chef Khor Eng Yew and Golden Peony’s own Executive Chinese Chef, Chef Ku Keung. Together, the two chefs will present a six-course menu that marries Chef Ku’s mastery of classic Cantonese precision with Chef Khor’s modern artistry, accompanied by a curated wine pairing designed to accentuate the interplay of flavours.

Prices for the China Blue culinary residency at Golden Peony runs from S$28++ to S$188++ for à la carte dishes, a four-course lunch at S$88++ per person, and a five-course dinner at S$208++. The six-course “Modernity Meets Tradition: A Six-Course Four-Hands Cantonese Dinner” on 1 November 2025 is priced at S$238++ per person (S$188++ inclusive of wine pairing).
